Weekend Wrap-Up

How is it that I have only been blogging a few weeks and I am already behind??? My plan is to blog regularly but we will see how it goes. It seems that everyone weekend we have something planned and this one was no exception.

Friday night we went to small group in Galveston. We go every Friday night but this week it was a little more of an adventure as the rains came down and the president flew into our area right as we were leaving. Between typical Friday traffic, the rain and the President the roads were a mess! We thought we might not never make it to Galveston but we did and were even mostly on time. Saturday I went to a baby shower while the soon-to-be Mr. did a bit of work and then we went out for dinner Saturday night. I had a coupon for Carraba's so off we went. (sidenote - I love coupons and even insisted we use one on our third date!) Sundays are busy as we are part of a church plant team in Galveston preparing to publicly launch on Easter Sunday. We have training on Sunday nights and this weekend I had extra children's training so we headed down there early this afternoon. We laughed as we drove back home tonight becuase thanks to daylight savings it was the first time we had driven back home in the daylight - it was a nice change!

We had a steady stream of rain for three days and it seems as though it has finally stopped. I promised this summer during the drought that I wouldn't complain about the rain but I was starting to think we may need a boat to get around. I love spring though so between the rain and extra green and daylight savings time I am one happy girl. Thankfully I don't much on my schedule so I think it will be a good day to catch up on some laundry and cleaning.

Meal Plan Monday

How is it already Monday? It seems as though time is just flying by. It's Monday and that means anothe meal plan. This week is a little different as we have rodeo tickets two nights but I'll once or twice (maybe).

Monday: Empanadas at Aaron's house
Tuesday: Rodeo
Wednesday: Chicken parmasean, pasta and roasted green beans
Thursday: Rodeo
Friday: Small group
Saturday: out to dinner if I pass the boards

So not our typical week but those are fun every once in a while.

THE Day

Well today was "THE Day" as we had begun to call it around here; the day of my national board exam for occupational therapy. This is the last step for me to practice as an occupational therapist in Texas. It is one of those things that you just aren't quite sure how it is going to go and in my mind was built up to the impossible. I have studied for the past seven weeks and let me tell you - I have NEVER studied like that in my life. And hopefully, I won't have to ever again! I took the tets this morning and overall I feel pretty good about it. Of course, I am preparing for the worst and hoping for the best. The results aren't posted for a week so all that's left to do is wait and pray. Stay tuned for a (hopefully happy) update next week!

Meal Plan Monday

Yes I'm a day early but I am headed to the store so thought I would post it now. My goal is to post every Monday what we're having. I do so much better with a plan. And yes, most of our dinners come via pinterest. So here's what's cooking at our house this week:

Monday: Tacos, refried beans and spanish rice
Tuesday: Chicken Pesto Pasta Shells, cesear salad and garlic bread
Wednesday: Which Wich (my request for the night before my exam)
Thursday: Aaron's house (we are so blessed that his mom has us over when she cooks, and it's always so yummy!)
Friday - Coconut Chicken, jasmine rice and broccoli
Saturday - BBQ chicken sandwiches, sweet potatoe fries

Now I'm hungry thinking about it all...off to the grocery store!

Welcome!

Welcome to my corner of blog world - I'm so glad you stopped by! I have been enjoying reading and keeping up with several blogs for a year or so now and decided to carve out my own little corner of the web and chronicle our lives here. We are in the midst of wedding planning so I'm sure that will provide for some good blogging along the way. Ever since the soon-to-be Mr. came along I dove into the cooking world headfirst so I hope to share the recipes I have found for my ever so picky meat and potatoes guy. I've always promised him that if something is terrible we will order pizza but so far the pizza number is still untouched on the refrigerator. Also, I am an avid bargain shopping so hopefully I'll share my favorite finds with all of you along the way. One of my friends once told me that if there was a good bargain to be found within a 15 mile radius of where I was, I would find it. I think this will be fun so let the blogging begin!
